Is this keyboard loud?

Not really, it really depends on your definition of loud, it does have a clicky clack sound to it but its not obnoxious. But in my opinion its not loud.

Does it light up? Are the colors changeable?

Hi:

I really love this keyboard.  Yes, it lights up. I have it set so that the letters and numbers all change to a different color every 12 or 30 seconds or so (all one color, not multiple colors at once like blue for one letter and the next letter next to it is red or yellow etc.).  I think you can program the keyboard to light up in various colors in various sections of the keyboard, but I haven't set it up like that, so I can't remember for sure.  You can also set the keyboard so that only one color shows for the entire keyboard and doesn't change.  I don't have any regrets.  I hope this helps you.

where is the caps lock do you have to do shift+c?

By default the Shift key is set as the Roccat Easy-Shift[+] funtion. Caps lock is set as the second function of the Thumbster 1 key, meaning you use Easy-Shift[+] and click Thumbster 1 to get capslock. However, these are the default settings, and by opening the driver you can remap and customize all of these keys, including returning the Shift key to it's normal function.

What kind of switches are on this board? My current board which is dying ATM is mechanical and I would like to get another mechanical board

Should i get this or SteelSeries Apex? I'm having a really tough choice on deciding

I chose the Roccat Isku because of the design and ability to change the color of the keys. You may prefer the classic design of the Apex. As far as function is concerned I don't see a huge difference. You may have a few more keys for mmo on the Apex. That's the only difference I see. Good luck making your decision.

Does anyone know if you can take off the wrist rest?

The "wrist wrest" is a molded part of the keyboard.
