What does "adjustable weight system" mean? Is it referring to the click weight/sensitivity? Does the system work?

The adjustable weight system is just a gimmick. I keep all of the weights in it and it feels perfect. Any less and the mouse would probably have problems. The adjustable weight system is just the generic three weights in the back of the mouse to steady your hand when playing shooters. Just a quick thing to not the adjustable system in the logitech g602 is just as gimmicky. Awesome mouse so far though. Really comfortable and feels durable.

Can you adjust the DPI, and if so, what are the various DPI settings?

Yes, by default, the second button under the scroll wheel is DPI level - Up: 400-DPI, 800-DPI, 1600-DPI, and 3200-DPI
