Question 1

Can this system also be used for 5.1? I didn't notice an output speaker connection for a Sub Woffer, my previous Yamaha AV receiver does have a SW connection output.

Yes. It can be configured as a 5.1  That is accomplished in the on-screen menu.  You can do 5.1 in the main room, and a separately controlled stereo pair for a different room.  Your question indicates an incorrect assumption on your part, which is that the amp provides a powered sub-woofer speaker output.  It does not.  Most modern receivers do not provide powered sub-woofer outputs.  Instead, like this one, they provide line level sub-woofer outputs, which you connect directly to the sub-woofer input.  The sub-woofer should be powered with it's own amplifier built in.  There are 2 line level sub-woofer outs.  They are labeled "PRE".  You can use either one, or both (if you have 2 sub-woofers).  The signal coming out of those jacks is only as "loud" as the signal coming out of your DVD player and needs additional amplification to be audible.  That is accomplished by the amplifier built into the powered sub-woofer.

Can one stream sound from this unit to wireless Bluetooth headphones?

Sorry, now up in Canada but i really can't reply as I returned the receiver and upgraded to the Yamaha YSP-5680 (I think that is the model) sound bar and returned the receiver after talking to Yamaha tech support.  I recommend contacting them for any advice as I have had great results in the process of getting simple explanations to questions re: configuring  their wireless systems.  Now looking at adding PB-4000 subwoofer as I have a pair of MusicCast 50's for rear sound.  High quality products with patient (for me) and knowledgeable staff.
