I may have missed this in the specifications. Does this support NVMe SSD, or only PCIe? I see PCIe, but am looking into NVMe SSD.

It is built in.
I will admit I don't use any Bluetooth devices on my computer, but using with Window's 10 it will let me add Bluetooth devices.

You can also disable in BIOS, if needed.

Do I have to update the bios for this motherboard to support 10920x processor?

I don't believe so. I'm using an i9-10980xe with mine and it works fine. All though ASUS does say there is a Bios update available, but I haven't updated it yet.

That all depends on what kind and how much ram you are using,  and the amount of space required to be installed seeing as its a mounted cooler but I personally think it would work just fine. With more then enough wiggle room left over most likely.

Will this board run Linux with a i9-10980XE? Iv'e seen some that are married to Windows 10 and I just don't want to use that OS on my next upgrade. I'm wanting 100% Linux I'm using 6th & 8th gens right now with no issues using just Linux.
