The 6+2 is the 8 you are looking for. It's just set up so that you can detach 2 of the pins if you only need a six pin connector.

Does it have a SATA 6GB/s connector?

It's a power supply (and a pretty good one at that). It provides DC electricity to the various components of the computer. It has SATA power connectors for powering SATA hard drives of any type. SATA I, II or III all use the same connector. Since it is a power supply and doesn't actually have data running through it, the "6GB/s" qualifier does not apply.

Will this fit in Rosewill THOR V2 Gaming ATX Full Tower Computer Case?

Without checking the specs of the case you refer to, my answer is almost certainly yes. If it doesn't fit, then the case is not an ATX case.  
At 16cm length, this power supply is 2cm longer than the ATX standard, but to my knowledge, no 850 watt ATX power supply is shorter.  The other two dimensions of this unit are standard ATX.
I purchased one of these because I wanted something more powerful than 550 watts that would fit in a micro-ATX case along with long devices occupying the front bays.  I also wanted a single 12v rail supply so as not to be limited by lower current separate rails. This power supply was by far the best, and possibly the most powerful unit that met my requirements.

I am having an issue with my current p.s.u. and i'm am trying to make sure that this power supply with work with my comp/mother board it is a M4N68T-M V2?

this was my first corsair purchas i have always had seasonic  but i am so amazed with the power i am geting i am running a dual thunderbolt  3 generation and i am heavy into gaming wont the best for your money this is it try it i bet you wont be sorry i am now corsair for life

Is this optimal for SLI? I know it says it is, but two questions how well did sli work for you? And does it come with enough cables for SLI?

Yes it is great for SLI and it comes with enough cables to SLI two cards. Without opening my computer case to check, I am unsure whether this supply could be used to SLI three cards.
I use this power supply for two GTX 680 GPU's in SLI on an Asus P8Z77-m PRO motherboard with a Core i7 3770K CPU running up to 4.2GHz on all cores.  It works perfectly.  You might be sailing a bit close to the wind if you had two GTX 770 GPU's, and I would not consider using it for any pair that is more power hungry than that.
From my experience with a smaller power supply that was inadequate, and assuming you have a moderately decent motherboard with voltage stability protection, if you attempt to overdrive the power supply, the mother board will reset the CPU.  The rig where I experienced that problem had a VS550 PSU driving the same CPU and motherboard, but with two GTX 660 GPU's in SLI, and then it only happened playing Civilization V in 3D while scrolling the screen. Action games all worked fine.

How many amps does this require?

I am not sure what you mean by "require."  Power supplies do what their names imply and supply amperage to your PC.  The output of this power supply can be found on the Specifications tab.  It lists +3.3V@30A, +5V@30A, +12V@70A, -12V@0.8A, +5VSB@3A, where the numbers before the @ denote the individual rails, and the numbers after the @ denote the supplied amperage.

You can also get the total amperage supplied by taking the watts (850) and dividing by 12 volts, to get ~70 amps, which is confirmed by the Specifications tab.
