Would I run into issues trying to put 3 of these 32gb ram Stix on a MB?

With DDR5, the odd stick penalty is much less severe than with DDR4,DDR3. DDR5 DIMMs are internally split into two 32-bit sub-channels per stick, but you will still have less than perfect total bandwidth. If your applications are memory bound you will feel this more than with typical desktop use. Adding in that extra stick is still better than not having it at all

can the ram sticks be used without anything being on top? the rgb or the other cooler thing?

Yes the ram sticks can be used without the RGB part. 
I had to remove it to get them to fit underneath my cooler and they are working just fine. There are two screws on the top that connect the RGB part to the main stick.

Depeding on the processor and sheer luck, you may have issues getting the full speed from the RAM without lots of wiggling around with the bios and timings etc.

Previously, I had the Intel XMP-ready Corsair Dominator Titanium 6600MT/s RAM paired with my MSI X870E Carbon motherboard (AM5 socket) and an AMD 7950X3D processor. However, I constantly encountered the DRAM light error code, and the computer often failed to restart properly or boot into Windows. I didn’t modify the RAM settings, and MSI defaulted the RAM to 4800MT/s. Frustrated, I decided to return the RAM and am now waiting for the AMD EXPO-ready 6000MT/s RAM to arrive.

Will this new RAM work without issues with my AMD 7950X3D and MSI X870E Carbon motherboard?

You shouldn't have an issue. The bios has been updated to accommodate accordingly. I didn't have an issue with my 7800x3d and Asus ROG Strix 670e-i. However other memory DIMMS I did have issues with.
