Question 1

I am just wondering if you can change the colors for the backlight to a solid color instead of rainbow? also wondering if you can change the rainbow effect to different colors as well. some "rainbow" keyboards are just stuck as that and i would like to make something like a red spectrum only lighting effect.

A fair demonstration and review on youtube- search for roswell k75 there (they won't let me put the link here).
As you can create some of your own settings for keyboard color / patterns, you should be able to do just about anything you want to.   The built in options are pretty amazing.  I am not a great fan of the key cap font used either, but I am getting used to it.  I have a bit of peripheral nephropathy numbness in my fingers and the mechanical keyboard it much better for me due to the heightened tactile feedback.

Do the blue or the brown switches feel better?

I bought one with the blue switches, so can't comment on the browns.  I find myself typing much faster and more accurately on this mechanical keyboard than the typical throw away mushy keyboards that ship with computers.  The RGB backlights on the keys are fine, but I don't care for the rainbow LEDs around the perimeter of the keyboard.  You can't turn them off with the software provided.

I have no idea what a blue switch or brown switch is. Can somebody explain these to me?

Blue makes an audible click when pressed...brown does not.

Is this keyboard wireless with bluetooth? I don't see that mentioned anywhere

No it needs USB slot to power up.
