Question 1

The title says this is a NUC7i7DNH1E (which would indicate a 7th gen i7 processor), but the description has it as an 8th gen i7 processor... which one is it actually?

This NUC Kit includes NUC Board NUC7i7DNB, which includes a "Kaby Lake-R" Core i7-8650U quad-core processor (soldered Ball Grid Array, so no CPU changes are possible).  So it's considered an 8th gen CPU, in spite of the apparent 7th gen model number for the board and kit.  I think we can blame Intel for confusion, they were probably rushing to market on this one...

The specification on Newegg implies that Intel Wireless-AC 8265 is included in barebones kit: Is this true?

how to connect speakers?

I purchased two gizmos for that purpose.

One gizmo is an HDMI to DVI adapter with 3.5mm audio out (my monitor only does DVI and VGA, so this adapter kills two birds with one stone for me).  A 3.5mm patch cable permanently connects the adapter output to a set of Logitech speakers.

The other gizmo is a USB external sound adapter.  This gives me audio out and microphone in for a headset.  I plan to only plug this in (to a front panel USB port) when I need to use a headset.
