Will this accept a European SIM card? Or is it limited to North American sims?

I have used German SIM cards in my axon 7 and expect the Axon10 Pro to work over there as well.  These phones are unlocked GSM devices that can work in over 120 countries

Can I use this on Verizons network just for a  few weeks/months and then switch it over to Mint Mobile?

I use the 10 Pro on a GSM network.  ZTE says it has support for CDMA, and it does support 3 of the 4 bands that Verizon uses.  I know when I got mine Verizon said they would not support it.  You have to ask Verizon if they have agreed to allow it on there network in the last 8 months.

This is not a 5G device, the 5G Model of The Axon 10 Pro is not available in the USA

The phone is unlocked so it will work with GSM carrier in the US (ie T-Mobile and ATT).

I just review the ZTE website, and I didn't find any frequencies that support CDMA ( Verizon and Sprint )?
