Can I install multiple hard drives in this case?

The case supports 10 HDDs.

If you get creative with bending some metal tabs, you could get away with 13-14.

Stock, the case comes with 4 hdd sleds (more are extra).

The hard drives notch into the case at the third rad mount.  I’m running a 240mm + 4HDDs.  If you need a third 360, you’re looking at 2-3 hdd bays remaining.

What is the 2.5 or 3.5 drive vs fan count ratio, looks like from the pics, if you install fans in the front you loose the 8 stacked drive bays?

If I understand your q correctly, no, there is no conflicting spacing in any of the fan-related areas.  That said, my latest one to work on is still in the original box so you'd have to open yours and measure to get confirmation.  Previous one is already in the customers hands  Aside, this one is just for me because I was so impressed by this model.  Not many of the non-server mobo's can drive 15 drives so you may still have plenty of space either way.  HTH.

What kind of fans can be installed in this case?

The case supports a variety of fan configurations: 4 x 120mm or 3 x 140mm fans at the front, 3 x 120mm or 3 x 140mm fans at the top, 1 x 120mm fan at the rear, 4 x 120mm fans on the right side, and 3 x 120mm fans on the left side.

Does this case fit between mid towers and server cases in terms of size?

It's a full tower size in height. And it's wider than some FT cases I've seen.
