Can this product do a solid color?

Yes...it depends on the controller you use to control the lighting.  My controller will allow for white, several shades of blue, yellow, orange, red, purple, green and other colors you can create through a color wheel with software.  The colors are bright and can be dimmed but have a dreamy quality.

Can this product do a white light?

the white to my eye white has just a tinge of blue its like a soft white with a blue undertone. Almost like how most house bulbs have a undertone of yellow if shining onto white it will be unnoticable but if you see the lights directly you can notice it. my controller is the Gigabyte B450 I WiFi, and the RGB Fusion 2.0 which could make a difference Im running 4 strips all highly visible on the outside of the machine.

Standard ATX dimensions are 305 × 244 mm.  This kit comes with two 400mm strips. You can daisy chain them. Just make sure you have some clearance between your motherboard and case. I didn't, so I used them to light around the case fans instead.

What RGB controller should I use with this? Mystic Light doesn't seem to work well when I try to use it even though I've got a JRGB1 and JRGB2 slot on my motherboard (MSI x570 "Gaming Plus")

These run off the MB RGB controller. They are addressable and have a (+)(-) & (D) line not (+) and (-) for each RGB color. It seems today most MBs will have both types of connectors/controllers built onboard.
