Can this run Player Unknowns Battle Grounds at 60 frames per second? Also can this fit in an asus laptop?

Yes, this will fit into an ASUS Zenbook. But only after you find somebody with a 10 ton power hammer to flatten the board.

Would one card like this handle 8k monitor without any issue? Do I need to have Dual SLI? I want to be able to handle 8k gaming and 4k rendering on monitors like these

If you want a gaming AND rendering card look at the 1080Ti family. The Quadro drivers don't do gaming well.
