I want to use this with the StarTech SATDOCK2REU3 2.5" & 3.5" Black SATA II USB 3.0 Hard Drive Docking Station by just removing the cap and inserting in to the docking station. 
Will this work or is the sleeve too large?

I can't answer this question directly because I am using a ThermalTake dock and not a StarTech.

I can tall you that when you take the end cap off the drive, about 1.5 inches of drive is exposed. You could measure the StarDock drive well and see how deep it is.

I can also tell you that the silicone rubber case, when installed on the drive, is very soft and flexible and in my case easily slides up a few millimeters to fit into my docking station.

The plastic is very flexible and it would be easy to pull back the back of the sleeve to expose half the drive. Ok, not that easy, but i have 5 more of these on order with another vendor and I think they are great.
