Does this allow for the display to be extended, or will it only allow mirrored displays?

All this does is convert your HDMI cable to a DVI cable, the extending of displays would have to do with your video card.

Does this adaptor provide sound too? Have an older tv and trying to find the right plug

No, it only transports the video signal.
