do i need to use a ubiquiti switch as well or well most PoE switch work?

Should work with any switch but i recommend a Ubiquity Tough switch because it has surge protection as well as POE built in. If you use a different switch install surge protection. I may be over sensitive because here in Florida without it we’d lose gear every day. Also ground well. Enough of my rambling. Yes you can use a different switch

Can the hard drive be replaced with something bigger?

Doesn’t seem like that’s an option... I’m sure you could, but the device is sealed so you’d have to go all custom with that, including reimagine with the software that’s included on the device.

can you use any cameras or do they need to be ubiquiti?

The Ubiquiti software comes preloaded and does not support other cameras.  However, you can reformat the drive and load whatever OS and software you would like to
