The UltraMax Pro from Iomega gives you a number of choices in your data back-up plan -- RAID 0, 1 or JBOD -- and all you have to do is move some switches on the back panel. The built in hardware RAID controller will do the rest, setting up the 2x750GB SATA II drives for you.
The second choice is connection. Do you want to use the speedy USB 2.0 connection? Or do you want the data to zip along at 3Gb/s with the eSATA connection? Either way the EMC Retrospect Express software will make data management easy.
