Question 1

What version BIOS did your board come with if you ordered from Newegg?  I've seen reports of it shipping with 404 when Ryzen needs a Minimum of 502 and theres apparently no way to flash it first.

Unfortunately I haven't even gotten to that step yet. The CPU fan I received said AM4 Compatible but it was not, so I am now scrambling to get a mounting bracket sent, which is turning out to be a pain. I am building my first PC and have to way to check the BIOS on the motherboard I have sitting here, that scares me that it will be stuck with an old setup.

Question 2

I purchased this board with bundled ram [CORSAIR Vengeance LPX 16GB (2 x 8GB) 288-Pin DDR4 SDRAM DDR4 3000 (PC4 24000)], but looking at the specs and knowing little about hardware, it looks like the ram is faster than the board can support.  Is that the case, or should I get everything out of the ram with this setup?

You may not be able to run that RAM at its rated speed on this board.  I tried running this board with some of the same Corsair RAM you mention, but could only get it to run at DDR 2133 speed.  I purchased some G. Skill Flare X DDR 3200 RAM, which is supposed to be more compatible with the new AMD boards, and it is running at its rated DDR 3200 speed.  AMD is releasing updated BIOSes, which may improve memory compatibility in the future, but it's not a guarantee.

Question 3

Is my H60 water-cooler compatible with the AM4 socket?

Yes the Corsair H60 works as is with the AM4 socket.
BTW,  I just received an H60 myself for the Prime X370-Pro  that I will receive in a few days.
Note:
The Corsair H60, H110i (H110i GT), H100i work as is with the AM4 socket.
All the other Corsair AIO water coolers require the 
"Corsair AM4-AMD Retention Bracket Kit for Hydro Series Coolers"

Question 4

Bought a Asus Prime x370-pro and a Ryzen1700.  Thought I might try a NVMe drive so I bought a "MyDigitalSSD BPX 80mm (2280) M.2 PCI Express 3.0 x4 (PCIe Gen3 x4) NVMe MLC SSD (480GB)".  In bios the M.2 slot showed empty.  Updated the bios to 0511, still empty.  Needless to say it didn't show up in Windows 10.  My question is has anyone tried this combination yet?  If not what NVMe drive have you got to work with Asus Prime X370-pro?

I have not tried an M2 drive on the prime, but I noticed multiple configuration settings for the  SATA drives that included a description of the M2 slot. You can check the hot swap and be sure that "Hyper Kit mode" is disabled. 
Also, the manual describes PCIe3.0 and SATA support over the M.2 connector, so there may be a setting that swaps the port priority with one of the actual SATA connectors (like ports 5 & 6). Its worth noting that the M2 connector is shared with actual SATA ports on the B350 and Z270 Prime Boards. Do not go by the motherboard specifications. Most RAM will only work at less than the rated speeds. 
It is better to look at the list of tested memory to see what works at rated speeds and what does not. To find this find the Prime X370-Pro on ASUS's web site and go to: Support > Drivers & Tools > Qualified Vendor List > PRIME X370-PRO Memory QVL
My 2666MHz RAM only works at 2133MHz. With the latest 0511 BIOS I now have gotten it up to 2400MHz. Still less than rated.

There really should not be an issue. As long as you don't exceed the boards Ram compatibility of 64Gb of ram. Make sure you update the Bios, at the time of writing (4/5/2017) the newest BIOS firmware is  0515.

Can this mobo support 3 monitors?

The motherboard has 2 monitor connectors (1 HDMI 1 display port) which are only useful if you use an amd A series GPU. If you're using a ryzen chip you will need a dedicated GPU, and the you will determine how many monitors can be used simultaneously

Will Noctua NH-D15 AM3 fit onto this or do I need AM4 secure Kit?

if it uses the 2 clips on either side it will fit just like any AMD cooler. However if you have to a four screw down bracket they won't fit as the new bracket screws for the AMD 4 is wider. Hope this answered your questions.
