Question 1

Does this work with nvida graphic cards? and is this a good mobo for high end gaming or should I look into a different mobo? Also I'm on a budget for my build but will upgrade later.

I installed an GTX 660 in the system I built with this.  Worked perfectly after installing both Linux (both proprietary and open source drivers) and Windows 7.

I suppose whether it is good for high-end gaming depends on what you mean by that.  With an i7, GTX 660, and 16GB of memory this ran everything I threw at it with high settings (again in both Linux and Windows, but I didn't test high-end games in Linux, just things like Trine 2 with ultra settings), before I gave it to the person who uses it.  That included Skryim with several ultra graphics mods, Saints Row 4, Far Cry 3, Just Cause 2, and a few others I'm probably forgetting.

If you're on a budget and those are the kinds of games you're after, it's great from my experience as long as you have a good CPU and GPU.

What power supply should I use? (or will any power supply do?)

what else will you have attached? video cards especially?  if nothing, I used the onboard video for a pc for my inlaws w/2 1tb seagates in raid 1 and it's worked great for 8 months now. I built their machine using all trusted name brand sales on newegg.  I think it was a Tt 550w Bronze that was on sale.

Can I use this without plugging anything into the 4pin pcie connector?

Sure you can. I have nothing plugged in PCIE_PWR1, but power cable is plugged into ATXPWR1 which is located next to DDR DIMMs on edge of board.

Will this work with Linux?

Yes it will.  I installed this mobo in an existing system that had a dual boot ubuntu and windows 7 I was able to load ubuntu just fine to pull out files I needed from my windows 7 partition.

does this have a usb 3.0 header?

Yes...The USB 3.0 header supports 2 USB 3.0 ports.  This is according to the spec sheet in the manual. I have just started building the unit.

I am new at building a computer. I see that the memory standard has several listings. Some include (OC) behind the number. In order to use the DDR3 with the (OC) do you have to over clock your mother board?

what the OC refers to is over clocking the memory in the bios. Basically if you put 1866 memory in the board it will default to 1600. you have to go into the memory profile in the bios and manually change it to 1866.

According to the manual that came with the board, it will, but you will have to follow the directions for gtting more power to the board (basically hooking up another jumper, not difficult) it does recommend getting a dedicated video card though as running 3 monitors from your motherboard will slow down the over all computing power.
