Specs say it will only support DDR4 2666, is this true? will it not support DDR4 3000? or will the 3000 just be slowed to 2666?

No, not true.  9600KF on a Z-series motherboard can and does run 3000 XMP Profile (which is, for example, base 2400 memory having a JEDEC XMP profile of 3000, such as Crucial Ballistix 3000 or Crucial Elite 3000).  It brother 9600K (with the Intel graphics enabled) will run 3600 XMPprofile memory  (e.g., Crucial Elite 3600) which has a base of 2666.  Note that 9600KF seems after considerable benchmarking to have no significant benchmark score advantage over normal 9600K (discovered after testing both).  An H-series motherboard will, however, enforce the base rating (2400 or 2600) and will not allow XMP 3000 (or above) memory to be run at the higher XMP profile speed.  So the limitation is a motherboard matter, not processor.
