will a 1080 fit in this mobo?

Of course this thing will fit a 1080, since this is a mini-itx however you wouldn't be able to fit more than 1. Also again, since this is the smallest form factor motherboard I wouldn't worry about if the GPU will fit in the MOBO rather than the case you are getting. For me, I tried to make my PC very compact and small. I fit a 1060 in a very small case with this motherboard and it barely fits, by like a couple cm. So be careful about your case when choosing a motherboard like this.

will an rx 570 msi graphics card work with this?

Sure, it's got a 16x pci express slot that works fine with my 1080 Ti so I don't see why not.

Do the 2 M.2 slots on this support a Raid 0 of 2 SSDs?

It looks like the H270I is actually a better choice for RAID support. Hard to find definite answer as the only thing I find is the B250I supports Intel Rapid Storage Technology which does have RAID support, but it is not listed as definitely having it. The Strix H270I is listed as having 0/1/5/10 support.
