Can I use this as a regular computer drive for backups?

You certainly can, however I would recommend a WD Red or Black depending on use case. If it is in a network attached storage definitely go Red. Black might be better if you are simply keeping it in a desktop PC.

How is the reliability for this product? Specifically owners who had this for 2+ years.

My 2TB WD20PURZ purchased installed with my Lorex Security System has failed after 2 years and 6 months. Of course, there is no warranty left and I must now purchase a replacement. I hope I have better luck with the new drive. At least it comes with a 3 year limited warranty.

1TB - 8TB size drives support up to 64 cameras, too?

There is no direct correlation between number of cameras and drive size. The difference will be how long you can record until the drive is full / the DVR overwrites old footage.
