The seagate surveillance 1 TB 64 Mb coach is a good idea I've installed it as a backup hard drive and had no trouble with this drive is quiet no noise I also have the 2 TB hard drive that I am using for my main hard drive I have no trouble with these drives I recommend these hard drives I give them a four star so this I drive is correct for that person that asked the question

Yes it should with no problems apple G5 towers can use sata I,Sata II and Sata III a well as SSD Drives (solid state drives).Of course you will need to format it and partition it of course! Any other questions feel free to ask me on here!

Is this SATA 1 or SATA 2?

SATA 1,2 & 3 are designed to be fully compatible. Normally the controller in a computer or DVR will communicate with the hard drive and select the proper data rate to match. If the original HDD is SATA 1 then it is most likely a small capacity drive and the DVR may have a limitation on the capacity and not necessarily on the SATA version.

I have an Dell Dimension E521 which has some kind of sata connector as I don't know the speed. The computer is dead because of the hard drive so I can't get much information. What I do know - The service tag number is 2Gd01c1. From that I think the mother board in is the HK980-CT103 UW457. It had an original 500GB. I will be running XP on it so I don't need anything beefy - just storage for files.

Can this mother board handle a 1 TB drive?

It should be able to handle the 1TB.  Earlier versions of XP cannot use the 1 TB as a boot disk, so the drive may need to be partitioned.
