Question 1

What firmware do the drives come with?  I need CN03 or higher for my NAS. Has anyone been able to upgrade the firmware? Thanks

My suggestion is to go to the manufacturer's website or call their support phone number.  Rarely from my years of experience does a hard drive need a firmware upgrade.  If it should, you will need a manufacturer provided utility and data file to flash the drive electronics firmware.  Also it could be that the NAS unit (enclosure or otherwise) that may be what needs the firmware upgrade so that it can access the hard drive.  Looks like you've got some investigating to do.  Hope that these clues help.

Would this hard drive be a good choice to use for a DIY NVR for a couple of wireless IP cams?

A Seagate  Skyhawk is what you want for IP Video:
alternately a WD Purple drive is an excellent IP Video drive.
Enterprise class drives are rated for the longest life and largest data throughput but come at a much higher price.

Does this drive use SMR (Shingled Magnetic Recording)?

No - Perpindicular - NO SMR. I believe only drives 5TB and up
started using SMR and only on certain models

In the description it says 3-year warranty, but under the Warranty & Returns tab it says 1 year warranty.  Which is it, and who provides the warranty (Newegg, Goharddrive, or Seagate)?
