Yes I have them in my 918+ and they are working great, over months.

Of course. It is a normal hard drive in functionality. It's just designed to operate at a lower temperature and draw less power when constantly run making them ideal for multi-drive storage arrays. However, for the money, it makes more sense to buy a WD Black for normal drive use. Similar price, but better performance

Can I use this to replace a WD red NAS 5400 RPM drive in a MyCloudEX2Uldra NAS in a RAID 1 configura?

Yes you can.  I would replace all drives with Red Plus or Red Pro drives as the basic Red drives are WMR (shingled) and have no place in any raid enclosure imho.  Please see: nasmaster dot com wd-red-vs-red-plus-vs-red-pro-nas-hdd  I only use the WD Red Pro drives due to speed, warranty, rated workload, and excellent price when on sale.

Unfortunately, the answer to your question is a negative.  According to the WD compatibility list for both models, only the WD4001FFSX (4 TB) & WD8001FFSX (8 TB) are compatible.
