I am looking to replace my ST9160821AS laptop drive. This 320GB model should be a good replacement and if it is does it come with imaging utility to image the new drive?

To my knowledge, it did not come with an imaging utility, although that is likely available as a free download on their website.  I have always used the imaging utilities of G4L (Ghost 4 Linux) and Clonezilla.   Both are free and very effective (and available on SourceForge).

If you are replacing your drive due to diminishing storage space, I'd recommend ST500LM000 over this drive.  It's a 500GB Hybrid drive which is well worth it.  I use this drive regularly and there is a definite improvement over a standard drive.

I also use Gparted (Gnome Partition Editor) to expand the system partition when imaging from a smaller drive to a larger drive.  This is also available on SourceForge.

So does this drive have self encryption or not, it doesn't really say?

No it does not. Information would need to be encrypted by secondary software.  I bought this drive for my PS3. It works really well for this purpose and is exceptionally faster than the factory drive Sony installed.

will this hard drive even work with tray caddy in the laptop with no issue with the connection line up?

if the slot/space/replacement location is the same size as a 2.5 drive, yes, if its not no, also some companies use a proprietary connector for their laptops, as in non standard SATA connectors made for use with cables

This page selling the Seagate Thin series model (ST320LT012) provides customers with false information.

Only the 500Gb model ST500LT015 is specified by Seagate to have FIPS-level encryption on the fly, or the ST500LT025 to have standard built-in encryption.

This is according to Seagate's data sheet entitled, when downloaded, as "momentus-thin-data-sheet-ds1702-10-1307us.pdf" and dated July 2103.

Will you fix the description on this page for this item's "Features" section" to remove the misleading sentences mentioning "Self-Encrypting Drives"?
